Instructions:
Prepare the Tangy-sweet Sauce
In a small pot, combine red vinegar, soy sauce, and sugar.
Bring to a boil, then turn off the heat and set aside.
Fry the chicken
Make shallow slits in the chicken thighs for even cooking.
Rub the chicken with salt and Sake, then coat with flour.
Dip into the beaten egg and fry in hot oil until golden brown and crispy.
Once fried, dip the chicken into the tangy-sweet sauce, coating it evenly.
Slice into bite-sized pieces and set aside.
Make the Tartar Sauce
Finely chop the onion.
In a microwave-safe bowl, crack eggs, poke the yolk and microwave for 1:20-1:30 minutes until cooked.
Mash the boiled egg and mix with chopped onion, mayonnaise, salt, and black pepper to create the tartar sauce.
Prepare the Enoki Salad
Place the dried Enoki mushrooms in a bowl and add 1 cup of water to rehydrate.
Squeeze out excess water, then mix with Torigara powder and sesame oil.
Cover and microwave for 1 minute.
Add sesame seeds and garlic chili oil, then mix well.
