Tenshin-don or Tenshin-han is a Chinese-inspired Japanese dish, traditionally combining a crab meat omelette with cooked rice and a savory sauce served in a bowl. Our version features a vegetable-based sauce using dried carrot and spinach. The natural Umami flavor from the vegetable Dashi adds a delightful touch, transforming this dish into a nourishing and comforting meal.

Ingredients:
2 cups Cooked rice (Rice Options)
4 pcs Egg
Sauce
400 ml Water
2 tbsp Dried carrot
2 tbsp Dried spinach
1 pack Vegetable Dashi
1 tbsp Soy sauce
1 tbsp Mirin
1 tbsp each Potato starch and water
Salt
Instructions:
Cook the rice to prepare.
In a pot, add water, vegetable Dashi pack, dried carrot, and dried spinach, and bring to a boil. Remove the Dashi pack after a few minutes.
Stir in soy sauce and Mirin.
In a small bowl, mix the potato starch with water, then add this slurry to the sauce and stir until it thickens.
Heat a frying pan over medium-low heat with cooking oil. Pour in the beaten eggs and cook until you have a round, flat omelette.
Place the cooked rice in a bowl, shaping it into a dome. Cover the rice with the omelette, then pour the sauce over the top.
