
[RECIPE] Chili Beans with Rice
Chili Beans is a comforting stew that you can easily recreate at home and enjoy over hot rice. Hawaiian-style is traditionally made with Portuguese sausage, spices, and kidney beans, it’s a hearty and flavorful dish. In this recipe, we use Japanese Kintoki Mame beans from Hokkaido, which are similar to kidney beans and add a rich, comforting texture to the dish.

Ingredients:

1 cup Kintoki beans
Vegetables:

½ Onion

3 ribs Celery

½ Bell pepper

1 clove Garlic
Protein:

1 lb Ground beef
-
4 oz Portuguese sausage
Seasoning and Sauce:

1 tsp Chili powder
-
1 tsp Oregano
-
1 tsp Paprika powder
-
1 tsp Cumin powder
-
4 tbsp Ketchup
-
2 tbsp Worcestershire sauce
-
1 tbsp Soy sauce
-
1 pack Vegetable stock powder
-
1 pinch Salt
-
2 pcs Bay leaf
-
1 can Tomato sauce
-
1 cup Water
-
1 cup Cooked Kintoki Mame beans

Cooking oil
Other Ingredients:

Shredded Cheese (for topping)

Chopped Scallions (for garnish)

Cooked rice (Rice Options)
Instructions:

Prepare the beans
If using dried Kintoki Mame beans, soak ½ cup of beans overnight, and cook with 2 cups of water for 40 minutes with a drop lid. -
Prepare the vegetables
Chop the onion, celery, bell pepper, and garlic.

Sauté the vegetables
Heat cooking oil in a frying pan over medium heat. Add garlic, onion, celery, and bell pepper. Stir-fry until softened.

Cook the meat
Add ground beef and chopped Portuguese sausage. Stir and cook until the beef is halfway done.

Season the dish
Stir in chili powder, oregano, paprika powder, cumin, ketchup, salt, soy sauce, Worcestershire sauce, vegetable stock powder, and water. Add the tomato sauce and a bay leaf. Simmer for 10 minutes.

Add the beans
Stir in the cooked Kintoki Mame beans and mix well. Simmer for another 10 minutes.

Assemble the dish
Serve the Chili Beans over warm cooked rice. Sprinkle shredded cheese and chopped scallions on top.
