[RECIPE] Hayashi Rice
Hayashi Rice is a comforting dish made with tender beef and onions simmered in a rice, savory sauce. This western-inspired Japanese favorite is typically served over freshly cooked rice. While store-bought roux can be used, this recipe shows you how to make it from scratch with simple, easily accessible ingredients.
Recipe:
Serving: 4-5
Time: 50 minutes
Ingredients:
-
4-5 cups Cooked Rice
-
1 lb Shaved Beef Steak
-
1 pc Medium Onion
-
8 oz Mushrooms
-
Cooking Oil
-
3 tbsp Butter (1 tbsp for finishing up)
-
Salt and Pepper
-
1 cup Red Wine
-
3 tbsp Ketchup
-
3 tbsp Mirin
-
3 tbsp Worcestershire Sauce
-
1 tbsp Soy Sauce
-
1 can Tomato Sauce (plain)
-
1 pack Vegetable Dashi
-
1 pc Bay Leaf
Instructions:
-
Cook the rice to prepare.
-
Thinly slice the onion and mushrooms. Season the beef with salt and pepper.
-
Heat cooking oil and 2 tbsp butter in a pot over medium heat. Add onions and sauté for about 15 minutes or until deeply browned.
-
Add the seasoned beef to the pot and stir-fry until it's halfway cooked.
-
Pour in the red wine gradually (in 2-3 additions), allowing it to simmer until almost evaporated, about 15 minutes.
-
Stir in Ketchup, Worcestershire Sauce, Miring, and Soy Sauce. Then, add Tomato Sauce and mix well.
-
Add the Vegetable Dashi Powder (open the packet), and bay leaf. Simmer for 10 minutes to let the flavors meld.
-
Add the mushrooms and cook for another 5 minutes. Stir in the remaining 1 tbsp of butter for a glossy finish.
-
In serving bowls, layer the cooked rice and ladle the Hayashi sauce on top. Garnish with chopped parsley for a fresh touch
