[RECIPE] Zosui - Japanese Rice Soup

Zosui, a comforting Japanese rice soup, is a nourishing dish with a savory Dashi broth base. Traditionally served at the end of a hot pot meal, Zosui is also perfect as a simple and satisfying meal on its own. The cooked rice is rinsed to remove excess starch, which helps maintain the gran shape and creates a refreshing texture. Try this recipe on a cold night for a cozy meal.

Time: 30 minutes 

 

Ingredients: 

  • 3 cups Cooked Rice

  • 8 oz Chicken Thigh

  • 1/8 pc Daikon

  • 2 pcs Small Carrot

  • 5 pcs Shiitake

  • 2 tbsp Dried Enoki

  • 3-4 pcs Egg

  • 4 cups Water

  • 2 packs Dashi

  • 3 tbsp Soy Sauce

  • Salt

  • Scallion 

 

Instructions: 

  1. Cook the rice to prepare.

  2. Cut the Daikon, carrots, and chicken thigh into bit-sized pieces. Slice the Shiitake mushrooms. Chop the scallions for garnish.

  3. In a large pot, add water and the Dashi packs. Bring to a boil.

  4. Add the chicken pieces to the pot , cooking for a few minutes until they start to cook through. Remove the Dashi packs.

  5. Ad the carrots, Dakon, Shiitake, and dried Enoky mushrooms. cover and cook for 5-6 minutes, until the vegetables are tender.

  6. Add soy sauce and a pinch of salt to taste. Stir to combine.

  7. Add the rinsed cooked rice to the pot and cook for an additional 5 minutes.

  8. Slowly drizzle the beaten eggs into the pot while stirring gently creating fluffy egg ribbons.

  9. Sprinkle chopped scallions over the soup. Serve hot, topped with shredded Nori if desired.
