
[RECIPE] Zosui - Japanese Rice Soup
Zosui, a comforting Japanese rice soup, is a nourishing dish with a savory Dashi broth base. Traditionally served at the end of a hot pot meal, Zosui is also perfect as a simple and satisfying meal on its own. The cooked rice is rinsed to remove excess starch, which helps maintain the gran shape and creates a refreshing texture. Try this recipe on a cold night for a cozy meal.

Ingredients:

3 cups Cooked Rice

8 oz Chicken Thigh

1/8 pc Daikon

2 pcs Small Carrot
-
5 pcs Shiitake
-
2 tbsp Dried Enoki

3-4 pcs Egg
-
4 cups Water
-
2 packs Dashi
-
3 tbsp Soy Sauce
-
Salt
-
Scallion
Instructions:

Cook the rice to prepare.

Cut the Daikon, carrots, and chicken thigh into bit-sized pieces. Slice the Shiitake mushrooms. Chop the scallions for garnish.

In a large pot, add water and the Dashi packs. Bring to a boil.

Add the chicken pieces to the pot , cooking for a few minutes until they start to cook through. Remove the Dashi packs.

Ad the carrots, Dakon, Shiitake, and dried Enoky mushrooms. cover and cook for 5-6 minutes, until the vegetables are tender.

Add soy sauce and a pinch of salt to taste. Stir to combine.

Add the rinsed cooked rice to the pot and cook for an additional 5 minutes.

Slowly drizzle the beaten eggs into the pot while stirring gently creating fluffy egg ribbons.

Sprinkle chopped scallions over the soup. Serve hot, topped with shredded Nori if desired.
