[RECIPE] Katsudon

One of the world-popular Japanese dishes, Katsudon, is made with Tonkatsu - pork cutlet, eggs and soy sauce and Dashi broth based savory sauce over a bowl of freshly cooked rice. Crispy Katsu, soft and half-runny eggs, and the delicious sauce are perfect combination for a satisfying meal.

Time: 60 minutes

 

Ingredients: 

  • 1&1/2 cups Rice

  • 300 ml water

 

Katsu

  • 3 pieces Sliced Pork Loin

  • Salt and Pepper

  • 1/2 cup Water

  • 1 Egg

  • 1/3 cup Flour

  • 2 cups Panko

  • Cooking oil (Sanwa Rice Oil)

Sauce

  • 4 Eggs

  • 1/4 Sliced Onion

  • 2 cups Water

  • 1 tbsp Dashi Powder (Tebiyamaya Dashi)

  • 2 tbsp Soy Sauce (Tatsumi Soy Sauce Dark)

  • 2 tbsp Mirin (Soken Mirin)

  • Scallion 

 

Instructions: 

  1. Cook the rice by rinsing the rice and adding water. Cook it in a rice cooker or pot.

  2. Salt and pepper the pork loin slices.

  3. In a bowl, mix water, egg and flour to make batter.

  4. Dip each pork into the batter, then coat it with Panko.

  5. Heat the cooking oil in a pan over medium heat.

  6. Add the pork into the oil, deep-fry each side until golden brown and cooked. Remove the excess oil by placing it on a paper towel, then cut the katsu into strips.

  7. Heat a pan over medium heat, add sliced onion, water, Dashi, soy sauce and mirin and simmer the onion until cooked.

  8. Add the katsu into the sauce mixture.

  9. Beat the eggs, pour it into the pan, adjust the heat to low, cook the egg about one minute with a lid on.

  10. Put the cooked rice in a bowl, add the Katsu with egg sauce onto the rice, garnish with chopped scallion.
