Revolutionary Rice Dressing: A Gentle, All-Natural Flavor Experience

This is the industry's first dressing made solely from rice, packed with the rich flavor of rice. It uses 100% domestic rice, specifically the Kinumusume rice from Shimane Prefecture, as the main ingredient. It is handmade in the koji room (fermentation room). The dressing uses plenty of amazake made from fresh koji and salt koji, making it a gentle choice for your body. With no added sugar, the inherent sweetness of rice is utilized, and you can enjoy a mild flavor with depth that has no sharp edges.

Ingredients:

  • Sweet Rice Wine (Amazake)
  • Rice Oil
  • Salted Rice Malt (Shio Koji)
  • Rice Vinegar

Gluten Free, No additives, No added Sugar

This dressing is ideal for salads that bring out the natural flavors of vegetables such as cucumbers, lettuce, tomatoes, broccoli, radish salads, and seaweed salads. Its rich, velvety texture coats the vegetables well, even in small amounts, making it easy to use. It's a dressing that's recommended for a wide range of people, from children to the elderly.

 

Recipe: Chicken Ham Marinated in Rice Dressing, Topped with Shiso Leaves

Ingredients (for 2 servings):

  • 1 piece of chicken breast
  • 5-6 shiso (Japanese mint) leaves
  • Lettuce, cabbage, etc. (to taste)
  • 50ml of rice dressing

Instructions:

  1. Put the chicken breast and rice dressing in a zip-lock bag, close the seal, and lightly knead it. Let it sit for 30 minutes.
  2. Fill a rice cooker with water at about 80°C, enough to submerge the chicken.
  3. Place the bag from step 1 into the water from step 2, close the rice cooker lid, and keep it warm for 1 hour.
  4. Once the time is up, remove the chicken, let it cool slightly, and cut it into your preferred thickness.
  5. To finish, drizzle a little more rice dressing over the chicken and top with chopped shiso leaves.

Tips:

  • The dressing, rich in sweet sake and salt koji, creates a milder and deeper flavor than using salt or sugar.
  • The flavor permeates thoroughly in about 30 minutes.
