This is a salt-flavored (Shio) pork (Buta) stir-fry with a savory starchy sauce served over freshly cooked rice. The delicious rice bowl dish is infused with the flavors of garlic and sesame oil, making it a satisfying one-bowl meal that will leave you craving for more.

Ingredients:
1 cup Rice
200 ml Water
1/2 lb Thin sliced pork belly
2 pcs Scallion
Sesame oil
Sesame seeds
Sauce
½ tsp Salt
1 tsp Chuka Dashi (chicken based stock)
1 tsp Sake
1 clove Garlic (minced)
1 cup Water
1 tbsp Lemon juice
Black pepper
1 tbsp Potato starch + 1 tbsp Water
Instructions:
Cook the rice by rinsing the rice and adding water. Cook it in a rice cooker or pot.
While the rice is cooking, prepare the ingredients by chopping the scallion, garlic, and cut the pork into bite size.
Heat a pan and add some sesame oil, add the pork belly to cook.
Once the pork is cooked through, add the sauce ingredients – salt, Chuka Dashi, garlic, Sake, lemon juice, black pepper, water and scallion.
In a small bowl, mix 1tbsp each of potato starch and water.
Once the sauce starts to thicken, remove it from the heat.
In a serving bowl, add the freshly cooked rice, then pour on the pork stir-fry with the sauce over it. Finish with some roasted sesame seeds.
